Bayern Munich are another side that will resist shooting when a pass can be made.
Side like Atletico are beatable, it just takes patience and being strong in posession as Atletico like with any team that constantly tries to close you down on the ball will tire.
Not sure Bayern have shown enough to suggest they can adapt to play that way, they have panicked a lot on the ball.
Seems crazy to suggest it but would Pep have to be considered as somewhat of a failure if he didn't win the CL with Bayern? Their domestic form isn't really a measure of anything these days.
If anything Athletico are very hard to beat, ask Barca and Madrid who are considered the best sides in the world. Dortmund could always be beaten the way they played and did get beaten a few times including by us and to be fair they had a top class bunch of players, Simeone doesn't have the same level of quality.
What Simeone is doing is amazing frankly, every season they are competing, they get into the latter stages of the CL and compete for the league every season against their big spending rivals.

Dortmund with high pressing, Atletico with closing down and nipping at your heels.
If you play it cagey and withstand the barrage than both are beatable.
