Actually where we have tried to go at them from the off at the Emirates when we've played them under Pochettino is that they end up fouling our players ridiculous amounts of time to which the referee will respond by letting play continue, they are able to soak up the pressure and catch us cold on the break.

When we played at White Hart Lane in 2016 we spent the first half soaking up their pressure and then arguably could have been 2-0 up before half time (instead of 1-0 up)

If not for Coquelin's silly sending off no question we would have won that game. You let Spurs do all the pressing they wear themselves out by the second half and they are catchable.....plus this isn't a side full of goals.
